Here are three types of energy balls with unique and exceptional flavors!
Chocolate-espresso will give you a bite that starts with a hint of bitterness followed by a burst of chocolate.
Peanut butter with a cookie dough texture; a simple classic but delicious.
Lemon and cranberries, sprinkled with poppy seeds, a ball with a mixture of fresh and fruity flavors.
Ingredients

2 cups (a can of 540 mL) of cooked chickpeas

3 tablespoons of maple syrup

1 teaspoon of vanilla extract

⅓ cup of creamy natural peanut butter
-
¼ teaspoon of Himalayan salt
-
1 teaspoon of ground cinnamon

½ cup of semi-sweet chocolate chips
-
2 cups (a can of 540 mL) of black beans
-
½ cup of ground oats or oat flour
-

1 tablespoon of ground coffee

1 cup of date puree (see note)

1 tablespoon of cocoa powder

½ cup of chocolate chips

A few whole coffee beans

1 cup of chickpeas

1 tablespoon (5 g) of lemon zest

⅓ cup of fresh lemon juice

1 teaspoon of poppy seeds

¼ teaspoon of ground turmeric

½ cup of sweetened dried cranberries

Directions
Peanut Butter Biscuit Balls:
Put all ingredients in a food processor, except for the chocolate chips. Blend until the chickpeas are smooth and homogeneous.
Put the mixture in a bowl and add the chocolate chips. Mix with your hands or with a spoon.
Shape into balls about 2 tablespoons in size with your hands or with a spoon.
Store in the refrigerator or freezer.
Boules choco-espresso :
Mix the black beans, ground coffee, date puree, oats, vanilla, and cocoa powder in a food processor until smooth and homogeneous.
Add the chocolate chips and mix with your hands or with a spoon.
Shape into balls about 2 tablespoons in size with your hands or with a spoon.
Add a coffee bean on top of each ball if desired.
Store in the refrigerator or freezer.
Boules au citron, graines de pavot et canneberges :
Put the cashews in a high-powered food processor for 15 seconds.
Add the rest of the ingredients except for the dried cranberries and poppy seeds.
Mettre le mélange dans un bol, incorporer à la cuillère les canneberges séchées et les graines de pavot et mélanger avec les mains ou à l'aide d'une cuillère.
Shape into balls about 2 tablespoons in size with your hands or with a spoon.
Store in the refrigerator or freezer.
Recipe Note
Assembly of Energy Balls:
Serve as a snack or dessert.
Notes and Tips:
Date Puree: If you can't find it in the store, you can easily make it at home. Date puree keeps well in the refrigerator for a duration of 3 weeks.
Ingredients:
- 500g of pitted dates
- 400ml of water
Preparation:
- In a saucepan, heat the dates and water over medium heat until the dates are soft.
- Blend everything (remaining water and dates) to get a smooth texture. Be careful because it's very hot. There you go!
- Use in recipes when the date puree is cold and not hot or lukewarm.
